For Chef Corinne Rice, "Life is about energy. I feel the difference." Rice teaches classes about her journey as a raw vegan, and people attend for many reasons: to learn about a different way of eating, to raise their body's pH levels, to learn about the diet prescribed to loved ones diagnosed with cancer. Above Lotus' bar are the words "Eat better here, feel better everywhere." Rice incorporates that motto in her raw-vegan diet.

"It's a lot of work," admitted Rice, a graduate of 105 Degrees Academy. To her, eating raw means not heating food above 104 degrees. Raw foods includes fruits, veggies, seeds, nuts, grains, beans, seaweeds and sprouts.

"I've lost 15 pounds in six months," said Rice, who looks fit in a floral sun dress. She is in the diet's "transitional phase," and some food (such as mushrooms) Rice recommended boiling. She also said she really likes maple syrup. Other foods raw foodies typically eat that aren't raw include nutritional yeast, herbs and spices and hot teas.

She admitted the diet isn't for everyone, but incorporating aspects of eating healthy and delicious food can be. Rice encouraged playing with ingredients. "A lot of people think healthy food has to not taste good," Rice said. "That's not the case."

Avocados were transformed into a chocolate pudding that tasted like a truffle with strawberries and walnuts, paired with a shot of almond milk. Cream of Asparagus Soup was made with fresh asparagus that tasted cooked from being frozen and thawed. Cheesy Tomato Flax Crackers were moist and flavorful made with yeast and dehydrated tomatoes. Pasta was a blend of kelp noodles and zucchini, which Rice had put in a saladacco. It was smothered in alfredo sauce made from cashews, then topped with spinach, mushrooms and tomatoes.
